Spirit of the week: Cape Byron Distillery ‘Brookies’ Slow Gin
Cape Byron Distillery, based in the hinterland of Byron Bay, is a new project led by Eddie Brook and former master distiller of Bruichladdich, Jim McEwan. Here, they’re focused on creating gins from the vast array of indigenous flora and fruit surrounding them, which is always hand-harvested with a seasonal approach.
This, the ‘Brookies’ slow gin, employs native Davidson plums – as opposed to sloe berries – to recreate a classic style in a decidedly modern guise. While lighter in expression than you might expect, it certainly holds a brilliant flavour profile – floral notes of “rose, watermelon and bright plum” make for some ideal springtime drinking. Mix it with some tonic, a drop or two of bitters, lots of ice and slice of pink grapefruit.
