The Laffays farm seven hectares and started producing Chablis in 1978, so their Old Vines (Vieilles Vignes) is a fantastic representation of all that history thanks to (typical of Chablis) hands-off approach to winemaking. All that leads to something classic, and encapsulates the way Chablis was in the not-too-distant past.
