Aglianico from Paxton's vineyard was whole bunch fermented and open fermented, before an early pressing to old oak. Lovely and lighter in style, elegant florals lead to a balanced palate, poised between cherry cola, saline acidity and a silky yet textural feel.

The fruit for this wine comes from vines averaging 60 years and was hand-harvested before being wild-fermented with 40% whole bunches and the remaining amount as uncrushed, destemmed berries.
