Macedon's Mountain Distilling have been killing it in the gin game for a few years now, though it's no exaggeration to say that they've made quite the statement with their new single malt spirit.
The distilling team have developed their own technology which fast-tracks the ageing process of whisky (usually a minimum of two years) down to as little as 21 days. Crazy, we know! Using red gum wood, this single malt is as complex and delicious as a traditionally aged whisky, though legally the name 'whisky' cannot be applied as it has not undergone the requisite two years of maturation to qualify it as such. It has a herbaceous and spicy nose, showing aromas of caramel, burnt wood and hedgerow. The palate is defined by an abundant peat flavour, with undertones of prunes, christmas spice and a hint of citrus fruit.
