Alice Bouvot has been making phenomenal wine at her Arbois-based l'Octavin winery for some time now - focussing on carefully grown and handled grapes, indigenous yeast fermentation, and no fining, filtering, or sulphur additions.
With Savagnin coming from an in-conversion organic producer in the Jura, the fruit underwent eight weeks maceration in tank - making for a textural and delicious expression of the grape.
