This beer was born out of an experiment to highlight the characteristics of a single source of bacteria and what it brings to a beer. Made in late 2021 this is the ‘Gold’ recipe fermented with yeast and bacteria collected from Manuka blossoms. It was transferred into ex-wine oak barrels for 9 months before being blended and bottled where it rested for conditioning and natural carbonation until release.

On the nose you're greeted with orange citrus aromas before the tight and lively palate, laden with notes of lemon soda, lemon barley and bitter lemon, with some dark herbal spice and moreish acidity.
