Inspired by the fermented Mexican drink made with pineapple skins and is delightfully sweet and sour. This beer uses a mix of lactic acid yeast with a Danish farmhouse strain to ferment the light base of ale malt and pineapple juice for a pop of acidity alongside fruity esters and just a touch of funk. Rounding it all out are notes of caramel, spice and lime and a refreshingly tart finish. Salud!
