Flametree Embers Chardonnay 2023

'Azahar' is Spanish for Orange Blossom, giving some indication of the bouquet this sherry possesses. It is made from mature Manzanilla that has undergone a brief oxidative ageing process, incorporating some of those textbook nutty characters without shedding its original form. It inhabits this liminal stage beautifully, with notes of chamomile tea, citrus, seaspray and honey intertwining with the oxidative complexity. (500ml)

Azahar Manzanilla Vieja en Rama

Hooray! We’ve made our own summer gin! It’s a creative collaboration with our mate Andrew Marks, of The Melbourne Gin Company, and we’re chuffed to say the least. While crafted with approachability and sunny vibes in mind, it’s also somewhat different to what you might expect; here, our owners, Paul and Jess, took inspiration from their Indian heritage and love of Chai tea to create a final blend consisting of eight botanicals. Tangelo, mandarin, lots of cardamom, coriander seed, cassia bark, anise myrtle, pepper berry and juniper naturally present highly-toned aromas, before a burst of refreshing citrus washes over the palate. As such, it’s definitely a candidate for refined cocktail making and is fantastic neat.

MGC x Blackhearts 8 Botanicals Gin

The style is super bright and there’s some lees work and a little trademark Margies, new oak spice. The palate is a wash with citrus and grapefruit pith and of course, some of that Indian Ocean spray. Superb lunch wine.

Jarrah Boy is owned and operated by Dale Volcale, a Monero Ngarigo man from Orbost in East Gippsland. These beers showcase unique native ingredients that are grown on Country by Indigenous farmers and harvesters. This Lager uses yam in the malt bill and has a clean and refreshing body—very sessionable. (375ml)

An aperitivo made from Lake Garda vines and individually infused botanicals, like Hibiscus and Monarda, which give it such a bewitching hue. Ideal with a splash of soda, or a healthy dash of mezcal or gin. Yum!

Hailing from Mer in the Torres Strait, Nornie is bringing indigenous ingredients to the fore and into kitchens all around Australia.
