Single malt, single cask, Tasmanian-grown, Tasmanian-made, hand-bottled whisky… yep, it’s time for an incredibly special release from the prolific Sullivans Cove Distillery!
Sullivans Cove have been lovingly distilling and maturing phenomenal whiskies down in Cambridge, Tasmania since 1994 with a single-minded focus on single malt, single cask releases, made using solely Tasmanian-grown ingredients (and Tasmanian water, of course).
Sullivans Cove 'Single Cask' TD0085 American Oak Ex-Whisky Refill 14yo 700ml $450
Distilled in March, 2006, this release has spent 14 years maturing in a single, 300L American oak cask which had previously housed an older batch of Sullivan Cove’s iconic Single Malt.
Ripe, round, and textural, with aromatics of sandalwood, canned peaches, kiwi, and strawberry musk leading into a tropical fruit palate, balanced by anise spice, vanilla, lemongrass, biscuit, dried banana, and a delicate grip of vanilla-driven American oak.

When the folks at Sullivans Cove officially title something a ‘Special Cask’, you know you’re in for a fascinating journey - a title reserved for their rarest, most unique whiskies, this release is exceptional. Matured in a 300L first-fill American oak ex-Apera cask for eleven years, there were only 281 bottles released.
Incredibly sumptuous and complex, fragrances of ripe nectarines, fresh hay, baked apples, and freshly pressed linen jump out of the glass. On the palate it’s rich and creamy, with plums, cocoa powder, chewy caramel, sea salt, a hint of pepper, and toasted marshmallow.
Sullivans Cove 'Old & Rare Single Cask' HH0296 American Oak 18yo 700ml $880
Over at Sullivans Cove, they typically bottle their whiskies at around the 10-12 year mark - but every now and then, a special cask comes along which shows additional ageing potential, and gets inducted into the ‘Old & rare’ category. This particular 200L ex-bourbon American oak cask was filled in 1999, and decanted in 2018, allowing for just over eighteen years maturation, and making it one of the oldest Australian single malt whiskies ever released.
As is to be expected, the resulting whisky is incredibly complex, textural, and nuanced. On the nose you’ll find perfumed blossoms, peaches, black pepper, tobacco leaf, and complex honey, leading into dark blackberry jam, pine nuts, waxy coconut, Bourbon, and a viscous briney characteristic. To finish, bursts of warm mango, banana, and kiwi, balanced by pastry, a more intense Bourbon note, custard, and a delicate florality.
