Fermented half whole bunch for full deliciousness. Love the elevated and floral notes. If you call it Gum, we're going to need it to have a long finish and this delivers with raspberry leaf, olives and a sprinkle of pepper.

Texture and a subtle orange glow thanks to just a moment on skins and a partial ferment in amphora. Crack it open when you want flavours that hit clean and luscious; like lemon curd, rockmelon and honeysuckle.

A delicious blend of Fiano that saw four days on skins and whole bunch-pressed Pecorino has resulted in what can only be described as golden hour in a bottle. A perfect match with prosciutto-wrapped melon, spicy Southeast Asian dishes or just a friend at sunset.

Consider his picking brilliant Tabilk fruit, fermenting for 7 days on skins and guiding the juice through carbonic maceration. It all adds up to brilliance and gives the profile a great blend of chamomile, honey and savoury freshness.
