Luke and Rosalind have swapped grapes for olives in their latest release!
Processed under a watchful eye at the nearby Yea Valley (while their own oil mill is built), the olives are crushed within 12 hours of picking to retain the freshness of the style. The olives in question are of the Frantoio variety—with a majority of green olives in the mix—they're cold pressed and settled briefly in tank to really lock in the freshness and the variety's wonderful peppery flavour.
Unfiltered and bottled with the natural turbidity, they've left aggressive handling at the door so the olives do the talking because as Rosalind puts it "hardcore processes can take the life out of the oil".
Drizzle over anything and everything.

Who is Luke Lambert?
Luke Lambert knew what he wanted to be when he grew up, a wine maker and his passion for all things food and wine drove him to make some exceptional wines.
Over the last decade Luke has been sourcing fruit from two vineyards in the Yarra Valley, Denton View Hill, and Tibooburra Estate. All wines are single vineyard, handpicked, wild yeast fermented and bottled without fining or filtration. With a love for Nebbiolo, that has landed him with a piece of land in Yea to the north of the Yarra, where he planted a 5-acre block of Nebbiolo, that is farmed and cared for by none other than Luke himself.
His Nebbiolo has been crowed as one of Australia’s best and his annual releases are highly sort after. If you’re lucky enough to get your hands on it, enjoy all it has to offer.
