Our brand new Bistro series is an ode to the European styles we love to drink, made a little closer to home.
Our love affair with Gamay is no secret and we've fallen hard for this one! A touch richer in style than often seen in local examples of the variety—fans of more traditional (read not Nouveau Carbonic) Gamay will find allegiance with this bottle. Expect lovely crunchy and snappy brambly berries, tart cherry with gentle brushes of herbs and a genuine fan of tannin driving and building through the palate. Pair with lentils and Toulouse sausage with a big dollop of mustard while listening to Leonard Cohen.
Fruit was sourced largely from the Abbey Vineyard in Tarrawarra and fermented as a mix of whole berry and whole bunches, on skins for two weeks, before transferring to puncheons for six months maturation.
