A youthful Shiraz awaits! All wound up but will uncoil nicely in your glass while keeping just an edge of compactness. If you want, you can give it a couple of years to really develop and blossom a wider bouquet of peppery spice, blackberry and genuine tannin. A gifting wine if there ever was one.

Paralian Springs Hill Shiraz 2023

Our love affair with Gamay is no secret and we've fallen hard for this one! A touch richer in style than often seen in local examples of the variety—fans of more traditional (read not Nouveau Carbonic) Gamay will find allegiance with this bottle. Expect lovely crunchy and snappy brambly berries, tart cherry with gentle brushes of herbs and a genuine fan of tannin driving and building through the palate. Pair with lentils and Toulouse sausage with a big dollop of mustard while listening to Leonard Cohen. Fruit was sourced largely from the Abbey Vineyard in Tarrawarra and fermented as a mix of whole berry and whole bunches, on skins for two weeks, before transferring to puncheons for six months maturation.

BISTRO Gamay 2023

Wonderfully aromatic, notes of bright red damson plum meet red cherry and raspberry to draw you further into the glass. Sitting prettily amongst dark forestal fruits on the flavour spectrum, with hints of woodland spice, fresh acidity and light touches of whole bunch sap, before late building tannin. Pretty, elegant and the perfect bottle to open at your next French bistro-themed dinner party.
