Babche wines are minimal intervention wines From the wife and husband team of Niki Nikolovska and Tim Byrne. This Pinot from the Bellarine Peninsula shows a clear maritime influence - it's spritely, saline with macerated cherry, plum and Australian bush mint. A little lo-fi and unadulterated, it's edgy but charming and full of stories.
