Babche Here In Spirit Fizz Shiraz 2023

Fruit sourced from the Moon Vineyard in Nagambie is gently basket pressed before wild fermentation and aging on lees for seven months. The result is citrus-laden upon opening before some oxidative richness creeps in and sits comfortably alongside the slight autolytic bready character.

Babche Farmers Fizz Chardonnay 2023

This saw just eight days on skins, with some firm phenolic character in the glass. Definitely Gris rather than Grigio in style, and full fruited with Bosc pear and toffee notes that lead the charge here before a tight line of acidity cuts through and makes way for some citrus and peach fuzz to creep to the fore. Deserves plenty of ponder time in a glass.

Equal parts Grenache, Mourvèdre, and Carignan come together in this beautifully balanced rosé. Fruit for this wine underwent both fermentation and elevage in a mix of barrique and demi muid (barrels typically used in the Rhône Valley) and has resulted in a vinous rosé that's so easy to love.

Made entirely with Ugni Blanc—or Trebbiano as we call it around these parts—in the Southern Rhône. A fantastic wine to drink alongside a feast set outdoors on a sunny day, it's textural with fantastic length and it just gets better as it opens up in the glass.

A glorious Southern Rhône red made up of predominately Grenache and equal portions Mourvedre and Cinsault. Fruit underwent two weeks of carbonic maceration before élevage in an even split between barriques and vats. The result is a wonderfully aromatic wine that shows structure, freshness and elegance in the glass.
