This 100% Chenin Blanc was fermented using indigenous yeasts in a mix of tank and barrel, which was then matured in neutral French oak for a number of months. With a few years under its belt, this is beautiful Chenin, with stone fruit, red apple skin, a whisper of tonic, and a hint of wax.
