Babche's take on Brut Nature / zero dosage sparkling, made using the Ancestral Method, is a wine we look forward to every year!
Fruit sourced from the Moon Vineyard in Nagambie is gently basket pressed before wild fermentation and aging on lees for seven months. The result is citrus-laden upon opening before some oxidative richness creeps in and sits comfortably alongside the slight autolytic bready character.
