There’s a nice mid-weight feel here and some peppery tannins at play because Cabardes is 35% Merlot, 30% Syrah, 20% Cabernet and 15% Grenache, and full of that south of France charm we’ve found reliably comforting over the years. Merci Pennautier.

Grown on vines that are 30+ years in age, the wine was fermented for 10-12 months in used barrels and bottled without fining or filtration. Bottled by gravity in accordance with the phase of the moon to keep agitation to a minimum. As far as the aromas go, it’s soft with rose petal and jasmine tea and a little green pepper. Delightful.
