The liqueur that needs no introduction… so here’s some trivia instead! Once upon a time, Campari got its colour from the fascinating cochineal bug (a scale insect found on cacti in places like Mexico) - who, when crushed, releases a brilliant red dye that’s been used in textiles for centuries. These days the colour comes from other less insect-y sources, but Campari continues to be delicious - perfect for Negronis, Americanos, highballs, and any other combination your imagination can dream up. Full Circle Fernet

Hailing from Bright, in Alpine Victoria, is this glorious orange-forward amaro, made with orange, rhubarb root, strawberry gum, elderberry and cacao. The result is an amaro layered with notes of ripe citrus, raspberry and weighty dark chocolate that makes for a great addition to a negroni, with a twist! (500ml) 25% ABV

Pastis from Henri Bardouin - one of the most prolific producers in the south of France. Wonderfully rich and elegant, and loaded up with 65 plants and spices. (700ml) 45% ABV

This Italian bitter aperitif needs no introduction, so how about a fun fact instead? Did you know: Fernet Branca was intitially created as a treatment for Cholera! Luckily it tastes so good, because it didn't really seem to work that well. Pungent botanicals with a refreshing bitterness, this is one to pour over the rocks to help start the evening in style. (700ml) 39% ABV

Made using a blend of 15 different flowers, ncluding daisy, violet, magnolia, saffron, jasmine, lavender and elderflower. On the nose it's waxy and honey-like, with notes of pollen and floral chamomile. On the palate there's a firm bitterness up front which is very reminiscent of artichoke, and gives way to waxy pollen and finishes with pretty yet bitter floral notes and honey. Gosh, it’s tasty! (500ml) 20.5% ABV

Beechworth Bitters The Daisy Age

Amaro Rubino is a certified organic handmade bitter liquor made with local honey and botanicals from the Lombardy and Piedmont area, featuring a floral, delicate, and sweet taste with hints of chamomile, thyme, laurel, and sage. (700ml) 25% ABV

Amaro Rubino Bio

A delicious, bitter digestive liqueur, which uses a ten-year-old rosé made under flor with a base of Syrah. Driven by wormwood as the base botanical and supported by native botanicals such as muntries, riberries, desert limes and quangdongs, which were blended with the base wine for six months in old French oak. The final ingredient added to the mix was black truffles from the Yarra Valley that bring layers of earthiness to the glass. (500ml)

Maidenii Nocturne Vin Amer

Roselle is created using a wine base of Nebbiolo and Mourvèdre from Heathcote and is blended with 24 botanicals, including Australian natives like Strawberry Gum, Tasmanian pepper berry and Salt Bush. We love Roselle neat as an aperitivo, served with soda, or to elevate your next negroni.

Fernet Hunter Granit is set apart from the rest due to its dryness, increased bitterness, and low sugar levels. Chamomile is added to the long list of botanicals which compliments and enhances the aromatic qualities. (700ml) 29.0% ABV

An amaro based digestif based on Piemontese Moscato with foraged botanicals. There are notes of sweet vermouth coming through and a slight oxidization that is reminiscent of Sherry backed up by a bitter tonic note. A great sipper, splashed over ice and a wedge of orange. 750ml 17% ABV

Sometimes known as the Smoky Rhubarb, this wine based recipe employs a variety of rhubarb root, alpine herbs and berries as the bittering agents. 750ml 20% ABV

Cappelletti Rabarbaro Sfumato Amaro

This is a pedal-to-the-metal amaro for the true lovers of this bitter liqueur. Notes of mint and spruce mingle with native Australian botanicals to produce a characterful drink with a powerful, lingering bitterness. (500ml) 37.5% ABV

Beechworth Bitters Up To Eleven Amaro

Made with a base of white base and botanicals grown from the garden, like rosemary, oregano, rhubarb to name a few. 750ml 35% ABV

Antica Torino Amaro della Sacra

A bright and citrus amaro, with local additions of bergamot, yuzu, lime, and orange along with their 32 signature botanicals. A delightful and less bitter style of amaro.

Beechworth Bitters Orchard Amaro

Italian Pastis might not be on your drinks radar, but trust us when we say that you're going to want to try this one out! Argalà is based in Bove, a small town in the foothills of the Maritime Alps. Established in 2011, their artisan spirits and liqueurs are made using traditional methods and flavoured with a mix of locally-foraged and mindfully-imported ingredients. Their Pastis is made with a wheat spirit base and mix of 35 botanicals, with muscovado sugar added post-distillation to give it its golden brown hue. Complex with a delightfully balanced sweetness. (700ml) 45% ABV

Argalà Pastis

Argalà is based in Bove, a small town in the foothills of the Maritime Alps. Established in 2011, their artisan spirits and liqueurs are made using traditional methods and flavoured with a mix of locally-foraged and mindfully-imported ingredients. The Amaro Alpino is the product of the unique environment from which it comes, with a mix of alpine and coastal elements that make it a wonderfully distinctive drink. A mix of 30 botanicals was cold-macerated in a blend of wheat spirit and alpine water mix to create Argalà's amaro, with the addition of a distillate further infused with a mix of herbs and plants. It's full-bodied, rich, and warming with a subtle balsamic sweetness and persistent bitterness. (700ml) 28% ABV
